Stainless-fermented farmhouse-inspired beer brewed with barley, spelt, wheat, and rye. We open ferment Melancholia to create more expressive yeast esters (banana, pear, bubblegum notes) and enhance phenols (subtle notes of clove and black cracked pepper). Coupled with an effervescent carbonation, this is a beautiful interpretation of a classic Saison/Farmhouse beer.  6.0% ABV
